Cinnamon Apple/Walnut Cake

  • Preheat oven to 400 degrees
  • Butter a shallow cake pan (8×8 inches)


Mix dry ingredients

  • 1/2 cup organic whole wheat flour
  • 1 cup organic unbleached white flour
  • 1/3 cup organic light brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp of cinnamon
  • 1/4 tsp of ginger
  • 1/4 tsp of nutmeg

Stir into the dry mixture separately and slowly

  • 1/4 cup lowfat milk
  • 1/4 cup apple cider
  • Add one beaten egg (local and organic, of course!)
  • 1/2 cup of melted local butter

Be sure ingredients are well mixed but not overbeaten

  • Add one cup or more (to taste) of peeled and sliced apples (tart is good, but this is up to you)
  • Add one cup or more (to taste) of chopped walnuts saving 2 tblspns for top
  • Pour gently into pan
  • Add remaining walnuts to top (raisins optional)
  • Bake 20 to 25 minutes at 400

Serve warm with a wedge of Gouda cheese1
